A Plumbers Mirror

There are two ways a business can go, you can be single minded, focused on a particular product or service and if your lucky you will find the customers who want just that, or you can go the way my business goes and make what your customer asks for. As a consequence you find yourselves going sideways but it makes for a more interesting life, and that’s what I have coming up in the next couple of days.

This weekend I am to be found in Hammersmith West London at the UMA Professional Makeup Expo a trade show for Theatre and Film Makeup Artists working on the http://www.locationmirror.co.uk stand. Manufacturing bespoke illuminated makeup Mirrors has become an important area of work for me, I work for a couple of Theatrical Hire companies making mirrors for hire, and for http://www.locationmirrors.co.uk I make bespoke ones, any shape and any colour, and that’s what they are showing this weekend.

You have a choice of a rather shocking pink one, a Landscape format mirror with the lamp holders mounted through the glass, and my particular favourite the plumbers mirror. My Mirror customer had seen some copper pipework chandeliers I had made for someone else, loved the concept but could I do it with a mirror.

As you can see it worked and I have to say I loved the end result. Hopefully the final customers love it as well, Ill find out this weekend. If you would like one get in touch .

The Apron made it !!

Its taken a week but finally the Old Blokes Kitchen Bacon sandwich video shoot is finished. I have had a week of making my favourite things frequently involving a fire so how much better can life become.

Over the course of the last week, I have cured and smoked bacon, churned butter, which was then smoked, made brown sauce, baked bread in my wood fired oven and then we put it all together. As often happens the intended result – a superb bacon sandwich was achieved but I will remember the by products as well.

Bacon rind is just the skin and we all throw it away, but if you take the skin off before you cure the bacon, you can make it into pork scratching’s, if you add a little paprika and cook it in a wood fired oven you end up with what I have described as the Norfolk super food. In the past I have used the phrase “food fit for a king” well he would have to have used a motor bike to get here fast because it didn’t last long.

The second triumph wasn’t even mine. The by product of making butter is buttermilk, which my dearly beloved used in scones. Its hard to say what was best the scones made with buttermilk or was it the fresh butter on top, but put the two together and they were  magnificent (note the past tense).

The final triumph is the apron. Following on from trendy TV Chefs I made myself an apron from denim and leather. I found myself extremely protective of it, wearing my old apron over the top of my trendy one when the camera was off to keep it clean, but I do really like it.

The good news is after a weeks work we ended up with a Bacon Sandwich that lived up to its billing  packed with flavour, with a piquant fruity sauce, you could eat by the spoonful from the jar. All we need to do now is edit the video, create the web site, write the recipe cards, so nothing really.

The icing on the cake is whilst the bread was baking the sand and cement for my summer project was delivered, a Cheese Cave which take it from me will be next years must have garden accessories, all the trendy folk will want one, so you heard it here first, although I cant guarantee to keep the apron clean.

A Cover Up

I have spent the day filming some more of the Old Blokes Kitchen Bacon Sandwich video. If you have missed out this its where I film one of my videos creating the constituent parts of a Bacon Sandwich, to create at last a bacon sandwich with the taste we all remember but never seem to get. So far we have filmed the curing and smoking of the bacon, with a slight detour to make Pork Scratching’s, we have churned the butter, and cooked on an open fire what turned out to be a superb fruity brown sauce. Tomorrow its the bread and then finally we get to put it all together. Its taken a week for one bacon sandwich.

Having watched many a cooking programme on TV there is a fashion for trendy chefs to have a signature rustic apron. So not wanting to be left behind and as  everyone can immediately see that I am so trendy I could almost be considered hipster, so if it works for them it must work for me, so out came the sewing machine. After all how difficult can it be.

The plan was for a simple dark blue heavy weight denim apron with red leather straps and fastened with a proper buckle so it cant come undone when you don’t want it too. Where I went wrong was leaving the workshop door open.  Apparently everyone and I mean everyone has an opinion about what makes a good apron, who knew it could be so contentious, but the good news is having expressed their opinion it appears that everyone wants one. This could be the start of a whole new product range.

Working on the theory that sex sells I did offer to pose with just the apron on but my dearly beloved felt our daughters couldn’t stand the emotional turmoil so instead we have an action shot. What do you think? do I have a product?image

A New World Superfood

I have been taking advantage of a few days break to film a new video series entitled “The Old Blokes Kitchen”. The concept is in every video I take an everyday food and by breaking it down into components which I then produce when we get to the final product it must be exceptional. So far so good I hear you cry.image

For the first video I am deconstructing the humble bacon sandwich, so I cure the bacon, which I then smoke, I make the sauce, the butter, the bread, and then put it all together, all cooked over a wood fire for extra flavour. Sounds good doesn’t it. Remember to click the follow button and you will get to find out when its uploaded before everyone else.

So for the first section  I started off by curing the bacon, which is now in the fridge doing its stuff . Now one of the by products of curing bacon is the skin. You don’t want it on the bacon so its easy to strip it off first, and you can then salt it, cook it and it becomes Pork scratching’s a well known delicacy much beloved by middle aged men everywhere including me.

I always look forward to making pork scatchings however this time we took it to another level. One of the central points of the Old blokes kitchen is that’s its an Old Bloke (Me) having fun cooking with fire, using tools I have made so I cooked the skin in my wood fired  oven ( if you want to see how I made the oven have a look at  https://www.youtube.com/watch?v=KCcGtEqZX9E )  .

Once they came out the oven words failed me for a good few minutes they were that good. The Scratching’s puffed up better than ever before, the fire along with a smidgeon of smoked paprika gave it all a gentle Smokey flavour, and it was undoubtedly the best I have ever had. Maybe its a slight exaggeration to describe it as a world super food, but I think its definitely a Norfolk one.

Cooking With Physics

We all have  little things that make us happy, for me its getting to make something from scratch, sometimes from wood, sometimes from steel or leather, when I cant do those I am equally at home in the kitchen, so when I get a chance to combine all of that,I’m really happy, and if there is an opportunity for a fire them I’m away.

Most of what I make is one offs, I never seem to have someone else’s design to work too, its usually my own work, for whatever reason, so for me part of the process is the pleasure of thinking a design through, starting with a concept and see where it takes me, which brings me to this weeks project.

Let me see if I can spell out the thought process and you can see where I am going with this. For sometime I have been wanting to try casting steel, after all how hard can it be. Now that’s not as stupid as it sounds I have to say in my defence I have been blacksmithing for many years so that is just a progression, I need to make a few new tools and a furnace, but in principle it must be possible, but we will gloss over that for a moment. My reason for wanting to cast metal is that last year I hammered out a frying pan, which has given me hours of pleasure, you can see where I am going.

The second strand of this is I enjoy cooking in the Garden, I have already made a smoker https://www.youtube.com/watch?v=tLV1KHZimSg in which I proudly cook Christmas dinner every year. I have a wood fired bread oven https://www.youtube.com/watch?v=KCcGtEqZX9E even if everyone wants me to cook pizza in it just to wind me up, but I don’t have a griddle.

The last part is, I am working on a series of Cooking videos, more of which in future posts, but the essence of which is if you control as much of the process as possible then you get a better end result. That includes the cookware. A bit far fetched? possibly but its great fun trying.

As part of the research I had read several articles about the difference between cast iron and aluminium frying pans. The opinion seems to be that aluminium is by far the best transmitter of heat, it spreads the heat evenly, whereas the cast iron retains the heat in hot spots. Cast Iron enthusiasts claim that Cast iron then radiates the retained heat upwards cooking into the centre of a piece of meat rather than just burning the outside as with aluminium. Now I have never been able to bring myself to part with the cash for a cast iron pan, so its time for an experiment, and so the Garden Grill was born.

I wanted  a hot plate that I could use in the garden, at a height that was comfortable to cook at, operating on a variety of fuels, wood or charcoal, on which I could griddle meat just like a barbecue, or cook in a pan, so that’s what I have made this weekend. Its amazing what you can do with a bit of steel, a welder, and some time.  The big design difference between anything I have seen in the shops is the replaceable top, that’s there for a reason which I will reveal later once I have built the alternatives. The one in the picture is made from 12mm solid steel rods at 10mm spacing that’s a lot of steel for a barbecue top.

In practice so much steel should  work the same way as a cast iron pan, retaining heat and then radiating it upwards into the food. I finished building the Garden Grill on Saturday afternoon and have tried it twice now once with charcoal, and once with wood from an old pallet so nothing fancy as the fuel. The end result is very promising, the meat on both occasions was well cooked through, with colour on the outside but without burning, in the frying pan we cooked potatoes and onions, and as an afterthought we roasted carrots by wrapping them in tin foil which were a revelation, and I am convinced that the food retained its heat on the plate for longer which bears out the research. maybe physics does work, so for me the perfect project. The next stage is too do something with the replaceable top, there is a plan, but for know lets just enjoy this one.image

Handmade Wooden Bed Frame

I have been making this style of bed for a good number of years taking over from my father, not for sale, but as a family tradition. Its a simple sturdy design, quick and easy to make, and lasts for years. I sleep every night on one my father made for us when my dearly beloved and I were first married over 30 years ago. I like to think my ones will also last just as long.

You will need

2 x 45mm x 45mm soft wood – headboard legs

2 x 45mm x 45mm softwood – base legs

1 x 250mm x 25mm x 1330 – headboard

2 x 145mm x 22mm x 1855mm softwood- sides

2 x 145mm x 22mm x 1380mm softwood – ends

1 x 70mm x 22mm x 1290mm feet end softwood -slat

13 x 70mm x 22mm x 1340 softwood slats

2 x 25mm x 22mm x 1770mm softwood – side slat supports

1 x 70 mmx 22mm x 1896mm softwood centre support

4 x 70mm x 22mm x 70mm softwood

1 x set four bed brackets – available from online ironmongers

and whatever you want to finish the wood. I used beeswax.

As a woodworking project this is about as simple as it gets, it requires the ability to measure and cut in a straight line. The measurements given fit a standard UK 4ft 6″ mattress. I will leave it to you to check it fits your mattress, there may be all kinds of regional differences I am not aware of.

Flat Pack Furniture the Tom Green way

My father, alas no longer with us started the tradition of building beds for the family, and when he couldn’t do it any longer I carried on. I don’t quite know how the tradition started, I cant pretend its because we were poor, or needed  to save money, you can probably buy a bed base from a chain store for the cost of the wood of one of these, but having said that a chain store bed wouldn’t last like one of his. My dearly beloved and I still sleep on a bed he made for us as a wedding present and we have been married for 30 years.

I took over 20 years ago, and the demand goes in waves as the family changes. I started off making simple beds for children moving out of cots. As they became teenagers, style became an issue, so there was the French Day bed, or the one on stilts with a desk underneath, which If I remember correctly had purple rope light underneath, you couldn’t see anything by it but oh so cool.

Now its time to make another, as we reach a stage where the family starts to spread its wings, but economics is forcing a design change. My fathers original design relied on solid wood, glue and screws, and once assembled  wasn’t designed to move. It assumes you buy a house and stay there for 20 years. But that’s not how most young people starting out now live. In England where we live and I am sure in many other places around the world its Generation Rent. You cant afford to buy, and so you rent, which means packing up every 18 months or so and moving on, which doesn’t suit the family bed design, which wasn’t designed to come apart.

So today I have cut and milled the wood for a new flat pack double bed base design that theoretically can be disassembled in about 10 minutes using just a screw driver. Next weekend I will put it together for the first time and as usual there will be a video for the heritagecraft youtube channel. I am aiming to build it from scratch in two hours even allowing for delays caused by filming and for less than £50.

Recently I created a Fire Lamp Sculpture which was exhibited at the Canary Wharf Winter Lights festival 2017. As someone who has spent many years supporting and lighting other artists work you always think you can do that, and finally I had the chance.

The First Cuckoo

Its often said that one of the first signs of spring is hearing a cuckoo, which I suppose depends upon where you live, whereas in our world the first sign of spring is the first day  we light the bread oven in a year.

So this year spring has come early, it was such a mild weekend, and I was having a weekend of setting fire to things. I suppose I should explain that statement. Yesterday I finished making a set of wooden wheels, and the last and undoubtedly the best part of the process is when you heat up the steel tyre in a fire to expand it and then slip it over the wooden wheel, quenching it with water in great clouds of steam when amazingly it shrinks back clamping the wheel. I have done this loads of times, I understand the science, and I am still amazed every time it works. But I digress at the end of the process of making a wheel I end up with lots of odd shape pieces of Hard Wood left over. Now the big pieces I turn into charcoal ( if you want to see how look at https://www.youtube.com/watch?v=TH6RrY8oWd4). The little pieces go for firewood and as it was such a lovely day what could be better than fire up the wood fired bread oven for the first time this year.

There is a considerable difference between a bread oven and the wood fired pizza oven, with the fire in a separate chamber, although you can cook pizza in it. Obviously as I built a bread oven I believe their best, but who cares all that matters is that it bakes magnificent bread

Its Mirror Time

Regular readers will know I have a steady trade making professional Makeup Mirrors for http://www.trafalgarlighting.co.uk a Theatrical Equipment Hire Company based in North London who in turn hire them out to all manner of customers. A very popular use is as an in vision prop in advertisement’s both in print and on TV and I do have to admit to a little thrill every time I see one.

We were having a conversation recently and apparently they keep getting asked for a much wider table top mirror with conventional light bulbs around three sides. We also discussed whether it was possible to clean up the design and loose the base of the lamp holder and mount it through the mirror. Well there’s a thought. So down to the glass merchants I went and luckily they knew a company who could cut the requisite holes in mirror glass with a water jet, something I would really like to have seen, although you really don’t want to know what it cost.

As you can see from the picture today was mirror time, and I assembled the mirror and the lamp holders for the first time to see what it looks like, it comes out as a much cleaner design and as each lamp is surrounded by mirror the light output is superb. Before it can be used I now have to make a structure to house the mirror, allowing it to be free standing upright on a table top, to enclose all the cabling behind, and enable it to spend most of its life in the back of a van with breaking, so no pressure there. Oh and its has to look good on camera, and if that’s not enough its just about to be London Fashion week and someone famous wants it
